Ah, spring is in the air. The days are brighter, the air is a little bit warmer, and things are slowly starting to turn green. You know what this calls for? A seasonal celebration, of course! And what better way to rejoice in this fresh start than with Springtime Strawberry Shortcake?! These moist and golden slices layered with a rich and creamy icing will have you kissing that cold weather goodbye. And the little bites of juicy strawberries give you a sweet taste of the warmness to come. Springtime Strawberry Shortcake is the best way to welcome back this refreshing time of year!
Ingredients
- For the cake:
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup cold butter, cubed
- 1 large egg, room temperature and beaten
- 2/3 cup half-and-half cream
- For the icing:
- 1 cup heavy whipping cream
- 2 tablespoons confectioners' sugar
- 1/8 teaspoon vanilla extract
- butter, to taste
- 1 1/2 cups fresh strawberries, sliced
Directions
Step 1 -Preheat the oven to 450 degrees F.
Step 2 -Grease an 8-inch round baking pan.
Step 3 -In a large bowl, combine the flour, the sugar, the baking powder, and the salt.
Step 4 -Cut the butter into the flour mixture until it resembles coarse crumbs.
Step 5 -In another bowl, whisk the egg and the half-and-half together.
Step 6 -Add the egg mixture to the crumb mixture and stir until it is just moistened.
Step 7 -Spread the batter into the prepared pan, slightly building it up around the edges.
Step 8 -Bake the cake until it is golden-brown, about 16-18 minutes.
Step 9 -Transfer the cake from the pan and onto a wire rack to cool.
Step 10 -In a bowl, beat the heavy cream until it thickens.
Step 11 -Add the confectioners' sugar and the vanilla to the whipped cream and beat until stiff peaks form.
Step 12 -Carefully use a sharp knife to split the cake in half crosswise.
Step 13 -Butter the bottom layer of the cake and top with 1/2 of the strawberries.
Step 14 -Top the strawberries with about 1/2 of the whipped topping.
Step 15 -Place the remaining cake on top of the whipped topping and cover with the remaining strawberries and the remaining whipped topping.
Step 16 -Cut into wedges and serve.
