When you can't get your sweetie with the sweet tooth to eat their greens, have we got the sneakiest sweet solution for you! These Secret Cookies are the only good kind of secret there is. From the outside, your treat-lover sees the dark brown, cinnamon-y, chocolate-chip-filled deliciousness. But within, you know there are all sorts of heart-healthy, colorful veggies and fiber-filled flaxseeds that are fueling your honey for the better! Shhh, Secret Cookies are too good for them to let them in on the truth! Let them cluelessly enjoy all the goodness found within!
Ingredients
- 3/4 medium zucchini, finely grated
- 1/2 carrot, finely grated
- 1 cup spinach, finely diced
- 1/3 cup applesauce
- 1 tablespoon ground flax seeds mixed with 2 tablespoons water
- 1/2 cup maple syrup
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/4 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/4 cup dark chocolate chips
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Line a baking sheet with parchment paper.
Step 3 -In a mixing bowl, combine the zucchini, the carrot, the spinach, the apple sauce, the flax seed mixture, and the maple syrup.
Step 4 -In another bowl, add the flour, the oats, the cocoa powder, the baking soda, the salt, and the cinnamon and stir to combine.
Step 5 -Add the veggie mixture into the flour mixture and mix until the cookie dough has a consistent texture all the way through.
Step 6 -Carefully fold the chocolate chips into the cookie dough.
Step 7 -Use a tablespoon or cookie scoop to scoop 8-10 even cookies and place on the prepared baking sheet, pressing them down into a flat shape, as they will not spread much.
Step 8 -Bake the cookies until they are slightly firm, about 12 minutes.
Step 9 -Transfer from the oven and allow the cookies to set, about 10 minutes.
Step 10 -Serve.
