Ingredients
- 2 tablespoons unsalted butter, plus more, to taste, for greasing the pan
- 1 pound pork sausage, casings removed
- 1 medium yellow onion, chopped
- 1 loaf (18 slices) white sandwich bread, crusts removed and bread cut into 1-inch cubes
- 2 1/2 cups sharp cheddar cheese, grated
- 1/2 cup fresh parsley, chopped
- 6 large eggs
- 2 cups half-and-half
- 1 scant teaspoon salt
- 1/4 teaspoon freshly ground black pepper

Step 1 -Grease a 9x13-inch baking dish with the extra butter.
Step 2 -In a large nonstick skillet over medium-high heat, melt 1 tablespoon of the butter.
Step 3 -Add the sausage to the melted butter and cook, while crumbling, until it is no longer pink, about 10 minutes.
Step 4 -Transfer the sausage to a large mixing bowl, leaving the drippings in the pan.
Step 5 -Return the pan to the heat and lower the heat to medium.
Step 6 -Add the onions and the remaining butter to the sausage drippings and cook, while stirring constantly, until the onions are soft and translucent, about 5 minutes.
Step 7 -Add the onion to the sausage in the mixing bowl.
Step 8 -Add the bread cubes, the cheddar cheese, and the parsley to the sausage mixture and toss well to combine.
Step 9 -Spread the sausage mixture evenly into the prepared baking pan.
Step 10 -In a medium bowl, add the eggs, the half-and-half, the salt, and the pepper, and whisk to combine.
Step 11 -Pour the egg mixture evenly over the sausage mixture.
Step 12 -Cover the baking dish tightly with plastic wrap and refrigerate for at least 2 hours and up to overnight.
Step 13 -Set the oven rack in the middle position.
Step 14 -Preheat the oven to 350 degrees F.
Step 15 -Unwrap the casserole and bake until puffed and golden-brown, about 1 hour.
Step 16 -Slice and serve.
