From the time she was a kid, our cousin Jenna has always been absolutely obsessed with all things chocolate. So, when Jenna's Chocolate Pudding started to become her staple dish at family gatherings, it wasn't a huge shock to us. What was shocking though was just how rich and creamy this stuff actually is. It's way better than anything you can get pre-made or pre-packaged. The sweetness and richness of this yummy treat has taught us that making pudding at home should always be how it's done. Take it from the chocolate enthusiast herself, Jenna's Chocolate Pudding will really make any meal sweeter!
Ingredients
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons cornstarch
- 1/2 teaspoon kosher salt
- 2 1/2 cups milk
- 3 large egg yolks
- 3 ounces bittersweet chocolate, chopped, plus more, to taste, for garnish
- 2 tablespoons butter
- 1 teaspoon pure vanilla extract
- whipped cream, to taste, for garnish
Directions
Step 1 -In a medium saucepan, add the sugar, the cocoa powder, the cornstarch, and the salt and mix to combine.
Step 2 -Slowly pour the milk into the cocoa mixture and whisk to combine.
Step 3 -Place the saucepan over medium heat and whisk the cocoa mixture until it comes to a boil, about 6 minutes.
Step 4 -In a medium heatproof bowl, add the egg yolks and beat until they are light and frothy.
Step 5 -Slowly pour 1/2 cup of the hot cocoa mixture into the beaten eggs and whisk to combine.
Step 6 -Slowly pour the egg mixture into the cocoa mixture in the saucepan and heat, whisking constantly, until it thickens into a pudding-like consistency, about 3 minutes.
Step 7 -Transfer the saucepan to a wire rack and whisk 3 ounces of the chopped chocolate, the butter, and the vanilla into the pudding until it is smooth.
Step 8 -If the pudding mixture looks lumpy, strain it through a fine mesh strainer to remove the lumps.
Step 9 -Pour the pudding into a large bowl and place plastic wrap directly onto the surface of it to prevent a skin from forming.
Step 10 -Place the bowl in the refrigerator and let the pudding chill, about 2 hours.
Step 11 -Garnish with the whipped cream and the remaining chopped chocolate and serve.
