Are you ready for a big day working on the farm (either literal or metaphorical)? Not with an empty stomach, you aren't! The Farmer's Plate is here to get you filled up with protein so you can tackle the day — fluffy eggs, tender potatoes, and spicy kielbasa are included! With a touch of Old Bay® seasoning for some zing, the Farmer's Plate is going to rustle you up some energy!
Ingredients
- 8 large eggs
- 1 teaspoon Old Bay seasoning
- 1 tablespoon water
- kosher salt, to taste
- black pepper, to taste
- 1 tablespoon olive oil or unsalted butter
- 1 russet potato, diced, browned and cooked
- 4 ounces kielbasa, thinly sliced, browned and cooked
- parsley, optional, to taste, chopped, for garnish
Directions
Step 1 -In a large bowl, add the eggs, the Old Bay, the water, the salt, and the pepper and whisk to combine.
Step 2 -In a 10-inch nonstick skillet over medium heat, add the oil.
Step 3 -Add the egg mixture to the hot skillet and cook, while stirring it with a rubber spatula every few seconds, until the eggs are semi-soft, about 2-3 minutes. For more firm eggs, cook the eggs for an additional 1-2 minutes.
Step 4 -Add the cooked potatoes and the cooked kielbasa to the egg mixture and fold to combine.
Step 5 -Serve garnished with the parsley.
