Rise and shine! It’s time to wake up and enjoy a hearty breakfast before you hit the trails. The Cowgirl Breakfast Casserole has everything you need to get yourself ready for the day, from fluffy eggs to melty cheese, to spicy and savory chorizo. Once you have a plate of Cowgirl Breakfast Casserole you’ll be ready for anything!
Ingredients
- 12 corn tortillas, cut into strips
- 12 ounces chorizo, cooked and drained
- 1 cup Mexican blend cheese, shredded
- 3 green onions, chopped
- 4 ounces red pimientos, diced and drained
- 8 large eggs, beaten until frothy
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Spray a 7x11-inch baking dish with nonstick cooking spray and set it aside.
Step 3 -Combine the tortilla strips, the chorizo, the cheese, the onions, the pimientos, and the eggs in the prepared baking dish, spreading the mixture out evenly.
Step 4 -Bake for 25 minutes on the center rack.
Step 5 -Let it cool before cutting into squares.
Step 6 -Serve.
