Make sure you stake your claim on these Steak-Your-Claim Tacos; you're going to want your fair share (or a little more)! Flank steak is marinated in bright, acidic lime juice and then grilled to juicy, rosy perfection! Stuff that in a tortilla and you have the foundation to the soft taco of your dreams! Top Steak-Your-Claim Tacos with all your favorite taco favorites and you'll find yourself extending Taco Tuesday well into the weekend!
Ingredients
- For the steak tacos:
- 1 (1 1/2-pound) flank steak
- 1 large lime, zested, plus 2 large limes, juiced
- 2 teaspoons kosher salt
- 1 teaspoon granulated sugar
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/8 teaspoon ground cinnamon
- olive oil, to taste, for oiling the grill grates
- corn tortillas, to taste
- Optional, for serving:
- 1/2 small red onion, sliced
- 1 large avocado, sliced
- 1/3 cup queso fresco, crumbled
- cilantro, to taste, chopped
- chimichurri sauce, to taste
- lime wedges, to taste
- fresh cabbage, to taste, chopped
- sour cream, to taste
Directions
Step 1 -In a 9x13-inch pan, add the flank steak.
Step 2 -Pour the lime juice over the steak and let the steak marinate at room temperature for 30 minutes.
Step 3 -In a small bowl, add the lime zest, the salt, the sugar, the black pepper, the chili powder, the cumin, the paprika, the garlic powder, the oregano, and the cinnamon and whisk to combine.
Step 4 -Rub both sides of the marinaded steak with the spice mixture, pressing it in to help the spices adhere to the meat.
Step 5 -Preheat the grill to high heat.
Step 6 -Lightly grease the grill grates using the oil.
Step 7 -Place the steak directly on the grill and cook, flipping it once, until the steak reaches an internal temperature of 140 degrees F, about 5 minutes per side.
Step 8 -Transfer the steak to a cutting board and cover it with foil.
Step 9 -Allow the steak to rest, covered, until it reaches an internal temperature of 145 degrees F for medium doneness, about 10 minutes.
Step 10 -Warm the tortillas on the grill or use a gas flame to char them slightly.
Step 11 -Cut the steak into strips against the grain.
Step 12 -Add the steak strips evenly to the tortillas.
Step 13 -Serve with your favorite toppings.
