First of all, these thighs bring a crispiness that we the people love dearly. Oh, and that creamy, cheesy, spinach-filled sauce is rich, and we know that's what we all aspire to be... (with joy and happiness that is, of course.) Finally, the ingredients are simple, and you likely already have them in your (presidential) cabinet. See? There's really no debate needed to convince you to give Presidential Chicken your (presidential) seal of approval. Ingredients
- 4 chicken thighs, bone-in and skin-on
- 3 teaspoons salt, divided
- 2 teaspoons pepper, divided
- 1 tablespoon oil
- 3 cloves garlic, chopped
- 1/2 onion, diced
- 1 tomato, diced
- 2 cups spinach
- 2 cups heavy cream
- 1/2 cup parmesan cheese, grated
- 2 tablespoons fresh flat-leaf parsley, chopped
Directions
Step 1 -Season the chicken thighs with 2 teaspoons of the salt and 1 teaspoon of the pepper.
Step 2 -In a skillet over medium-low heat, heat the oil.
Step 3 -Place the seasoned chicken thighs, skin-side down, in the oil and cook, moving them around occasionally, until the skin is crisp, about 13 minutes.
Step 4 -Flip the chicken thighs and cook until they reach an internal temperature of 165 degrees F, about 15 minutes.
Step 5 -Transfer the chicken thighs from the skillet.
Step 6 -Add the garlic and the onion to the same skillet and cook, while stirring, until the onions are translucent.
Step 7 -Stir the tomatoes and the spinach into the onion mixture and cook until the spinach has wilted.
Step 8 -Add the heavy cream, the remaining salt, and the remaining pepper to the spinach mixture and bring to a boil.
Step 9 -Add the parmesan cheese and the parsley to the sauce mixture and cook, while stirring, until it has slightly thickened.
Step 10 -Place the chicken thighs in the skillet and spoon the sauce over them.
Step 11 -Serve.
