Ingredients

  • 2 avocados, diced, divided
  • 1 medium tomato, diced
  • 1 jalapeño pepper, seeded and finely diced
  • 1 lime, juiced
  • 1/2 cup black beans, drained and rinsed
  • 4 green onions, thinly sliced
  • 1/2 cup sharp cheddar cheese, shredded
  • salt, to taste
  • pepper, to taste
  • tortilla chips, optional, to taste, for serving

Directions

Step 1 -Mash 1 of the avocados in a bowl.

Step 2 -Add the tomatoes, the jalapeños, and the lime juice, mixing to combine.

Step 3 -Add the beans, the onions, the cheese, and the remaining avocado, mixing well. Season with the salt and the pepper.

Step 4 -Cover and place in the refrigerator until ready to eat.

Step 5 -Serve with your favorite chips!
