Homestyle Chocolate Chip Muffins. Does anything else need to be said? Homestyle Chocolate Chip Muffins! Tender, buttery muffins, filled and topped with melty, rich chocolate chips. Mmmm! The fact that these are so easy to make will transform breakfast forever! These truly bring the bakery to your kitchen!
Ingredients
- 1 cup semisweet chocolate chips
- 1/2 cup mini chocolate chips
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1/4 cup vegetable oil
- 1/4 cup unsalted butter, melted
- 2/3 cup light brown sugar, packed
- 1 large egg, room temperature
- 1 cup buttermilk, room temperature
- 1 teaspoon vanilla extract
- 2 tablespoons sparkling sugar, optional
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -Line a standard 12-cup muffin tin with paper liners.
Step 3 -In a small bowl, add the semisweet chocolate chips and the mini chocolate chips and stir to combine. Set the chocolate chips aside.
Step 4 -In a large bowl, add the flour, the baking powder, the baking soda, and the salt and whisk to combine.
Step 5 -In a medium bowl, add the oil, the melted butter, the brown sugar, the egg, the buttermilk, and the vanilla and whisk to combine.
Step 6 -Add the oil mixture to the flour mixture and stir until just combined into a batter.
Step 7 -Add 1 cup of the chocolate chips to the batter and stir gently to combine.
Step 8 -Chill the batter in the refrigerator for at least 15 minutes.
Step 9 -Transfer the batter from the refrigerator and spoon the batter evenly into the cups of the prepared muffin tin.
Step 10 -Top the batter in the muffin cups evenly with the remaining chocolate chips. Make sure to press the chocolate chips lightly into the batter.
Step 11 -Sprinkle the tops of the batter evenly with the sparkling sugar.
Step 12 -Bake the muffins for 5 minutes.
Step 13 -Reduce the oven temperature to 350 degrees F and continue to bake the muffins until a toothpick inserted into the center of a muffin comes out relatively clean with only a few moist crumbs attached, about 12-14 minutes.
Step 14 -Transfer the muffin tin to a wire rack to cool.
Step 15 -Serve.
