Holiday Cranberry Bread is tender, buttery, and infused with that classic Christmas flavor combination as bright as the lights on your tree; sunny orange and tart cranberry! Of course, this Holiday Cranberry Bread—the cake you can eat for breakfast guilt-free—has a little more joy for the world up its sleeve; crunchy walnuts for texture and a little extra wonder! Well, it's no secret Holiday Cranberry Bread is on Santa's Nice List!
Ingredients
- 2 cups flour
- 3/4 cup white sugar
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 cup unsalted butter, cut into pieces, softened
- 1 tablespoon orange zest
- 3/4 cup orange juice
- 1 large egg, beaten
- 1 cup cranberries, chopped
- 1/2 cup walnuts, optional, chopped
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease an 8 1/2x4 1/2-inch loaf pan.
Step 3 -In a bowl, add the flour, the sugar, the baking powder, the salt, and the baking soda and whisk to combine.
Step 4 -Add the butter into the flour mixture and stir until combined.
Step 5 -Add the orange zest, the orange juice, and the egg to the flour mixture and mix well.
Step 6 -Fold in the cranberries and the walnuts.
Step 7 -Spoon the batter into the prepared pan.
Step 8 -Bake until a toothpick inserted into the center of the bread comes out clean, about 1 hour-1 hour 15 minutes.
Step 9 -Cool the bread in the pan for 10 minutes.
Step 10 -Transfer the bread to a wire rack to cool completely.
Step 11 -Slice and serve.
