Some cravings just have to be met! Fish Fritters will meet those seafood urges in a most delicious way! Salted codfish is shredded and combined into a seasoned fritter mixture, then deep-fried until golden-brown. Can't you just smell that amazing aroma already? Fish Fritters are a wonderful way to add a fresh catch to any meal. Reel some in tonight!
Ingredients
- 1/2 pound dried salted codfish fillets, boneless
- water, to taste
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon smoked paprika
- 1 teaspoon granulated garlic
- 1/2 teaspoon granulated sugar
- 1/2 medium onion, finely diced
- 1 teaspoon fresh thyme, minced
- 2 tablespoons red bell pepper, minced
- 1/2 teaspoon scotch bonnet pepper powder or hot sauce
- 3 tablespoons parsley, minced
- 1 large egg
- 1/2 cup milk, plus more, to taste
- salt, to taste
- freshly ground black pepper, to taste
- 3 cups vegetable oil
Directions
Step 1 -In a large bowl, add the codfish and enough of the water to just cover the fillets and allow them to soak for at least 8 hours and up to several days, changing the water several times. This is important to remove the salt.
Step 2 -Drain the water.
Step 3 -Add the fish to a food processor and pulse until it is finely shredded.
Step 4 -In a second large bowl, add the flour, the baking powder, the smoked paprika, the granulated garlic, and the granulated sugar and whisk to combine.
Step 5 -Add the shredded fish, the onions, the thyme, the red bell peppers, the scotch bonnet pepper powder, the parsley, and the egg to the flour mixture and whisk to combine.
Step 6 -Gradually add 1/2 cup of the milk, 1/4 cup at a time, to the fish mixture, while stirring continually. Add the extra milk, as needed, until the desired texture is reached.
Step 7 -Taste the fish mixture and season with the salt and the black pepper, as needed. Stir to combine.
Step 8 -In a large skillet or saucepan, add the vegetable oil and heat it to 350 degrees F.
Step 9 -Carefully place spoonfuls of the fish batter mixture, in batches, into the heated oil and fry until they are crisp and golden-brown, about 3-4 minutes. Carefully flip the fritters as needed with a slotted spoon to ensure they are browned on all sides evenly. Repeat the frying process until all of the fritters are fried.
Step 10 -Use a slotted spoon to place the fried fritters on a paper-towel-lined plate to drain.
Step 11 -Serve warm.
