Waking up should be easy-peasy, but we all know it isn't that simple. You know what can be though? Breakfast. This Breakfast Hash showcases the caramelized sweetness of sweet potatoes, the savory flavor of scallions, the succulence and crispiness of bacon, and some zesty seasonings to help you find your get-up-and-go, even during the toughest mornings! Plus, Breakfast Hash only takes 30 minutes to make. It can be a good morning after all!
Ingredients
- 4 slices thick-cut bacon, chopped
- 2 pounds sweet potato, peeled and cut into 3/4-inch pieces
- 1 red bell pepper, roughly chopped
- 6 scallions, thinly sliced, with the white and the light green parts separated from the dark green parts
- 1/2 cup water
- 1 1/2 teaspoons kosher salt
- 1 1/2 teaspoons paprika
- 1 teaspoon cumin
- 1/4 teaspoon garlic powder
Directions
Step 1 -Cook the bacon in a large cast-iron skillet over medium heat, stirring occasionally, until crisp and rendered, about 8-10 minutes.
Step 2 -Use a slotted spoon to transfer the bacon to a paper-towel-lined plate, reserving the drippings in the skillet.
Step 3 -Add the sweet potatoes, the bell pepper, and the white and light green parts of the scallions to the skillet.
Step 4 -Cook the veggie mixture, stirring occasionally, until it just begins to soften, about 10 minutes.
Step 5 -Stir the water, the salt, the paprika, the cumin, and the garlic powder into the veggie mixture.
Step 6 -Cover and cook the veggie mixture, stirring occasionally, until the sweet potatoes are mostly tender, about 8-12 minutes.
Step 7 -Uncover the skillet and increase the heat to medium-high.
Step 8 -Cook the veggie mixture, stirring occasionally, until the potatoes are tender and browned in spots, and all the liquid has evaporated, about 5-7 minutes.
Step 9 -Stir the reserved bacon and the dark green parts of the scallions into the hash mixture.
Step 10 -Serve.
