When savory, crumbled Italian sausage joins special forces with shredded hash browns, tons of cheddar, mozzarella, and parmesan cheese, plus the fist-pumping power of spinach and sun-dried tomatoes, then you know you've reached the pinnacle of pep-in-your-step (breakfast) perfection. Ingredients
- 1 pound bulk Italian sausage
- 4 cups frozen shredded hash brown potatoes, thawed
- 1 cup cheddar cheese, shredded
- 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
- 1/2 cup oil-packed sun-dried tomatoes with herbs, drained and julienned
- 1 cup part-skim mozzarella cheese, shredded
- 4 large eggs
- 3/4 cup 2% milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons parmesan cheese, grated or shredded
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a 7x11-inch baking dish with nonstick cooking spray.
Step 3 -In a large skillet over medium-high heat, add the Italian sausage and cook, while crumbling, until it is no longer pink, about 6-8 minutes. Drain the excess grease.
Step 4 -In a large bowl, add the hash browns and the cheddar cheese and stir to combine.
Step 5 -Layer 1/2 of the hash brown-cheddar mixture, 1/2 of the cooked sausage, 1/2 of the spinach, and 1/2 of the sun-dried tomatoes in the prepared baking dish. Repeat the layers once.
Step 6 -Evenly sprinkle the mozzarella over the sun-dried tomato layer.
Step 7 -In a medium bowl, add the eggs, the milk, the salt, and the black pepper and whisk to combine.
Step 8 -Evenly pour the egg mixture over the mozzarella layer.
Step 9 -Cover the baking dish and bake the sausage bake, about 35 minutes.
Step 10 -Evenly sprinkle the sausage bake with the parmesan cheese and bake, uncovered, until it is bubbly and the cheese is melted, about 10-15 minutes.
Step 11 -Transfer the baking dish to a wire rack and let the sausage bake stand, about 5-10 minutes.
Step 12 -Serve.
